Pork Medallions with sweet potato & asparagus (Detox - Day 3 dinner)

An all time favourite of mine - crispy pork medallions on a creamy sauce. With a gym workout under my belt I added a pile of sweet potato (slightly higher in calories but much more nutritious and less starchy than usual potatoes). The asparagus goes great with this meal (as does brocolli).

170g Sweet potato = 139
165g (1 bunch) Asparagus = 29
Crispy pork with cream sauce = 369

The following is included in one portion of the pork recipe (full recipe in the 400 calorie meal page):
3 Pork medallions (150g) =  157
1 tsp olive oil = 40
5g flour = 16
1/2 apple = 35
62ml apple juice = 32
50g Philadelphia 5% fat soft cheese = 55
1/4 red onion (55g) = 21
75g Chestnut mushrooms = 22


This dinner provides 47g protein and 18g fat (8g from the cheese, 4.5g from the oil, 3g from the pork and .5g from the mushrooms, 1g from asparagus and the other 1g comes from the other various items).

The fat content is a bit on the high side with that cheese but it makes the meal and I had a good gym workout.

Altogether this hearty meal comes to 537 calories and brings my day's consumption to: 1182
